January 11, 2016 - Kitchen Lab sauces: an exclusive Quebec innovation at Metro

Montreal, January 11, 2016 – Metro will be offering three unique sauces made in Terrebonne specifically from atypical vegetables. Les Aliments Sibon has developed, at the request of Metro’s purchasing team, sauces with original flavours made from atypical vegetables and category 2 vegetables.

“We had a special request for them: to invent pasta or accompaniment sauces that not only set themselves apart, but that would also be made using vegetables that would have otherwise been overlooked. They rose to the challenge! We are constantly trying to optimize our relationships with innovative Quebec suppliers based on the needs of our clientele, and this recent innovation is a good example”, said Marie-Claude Bacon, Senior Director, Corporate Affairs at Metro.

All three vegetarian sauces – beet rosée, squash & smoked paprika and eggplant and olives – require more time and resources to produce throughout the entire process. The first step is to get the vegetables – from farmers who would not have picked them, or from a distributor, where they don’t get past the sorting stage – and then transform them: because of their irregular shape, they can be more difficult to peel, for example. “We put the same promise in every jar: using vegetables that would not otherwise make it to the consumer’s plate. It requires a greater effort on our part, but the result is well worth it.”, said Stéphanie David, Associate, Business Development for Aliments Sibon.

Kitchen Lab sauces are only available at Metro, in a 500 ml size.

This agreement is in keeping with Metro’s Local Purchasing Policy, of which one of the three guiding principles is to make Metro the main ally of innovative suppliers. In so doing, Metro confirms its interest in Quebec suppliers who want and who are able to continuously develop their products or their production and who show growth potential with respect to distribution.
